Finca El Corozal is owned by seven brothers who are 4th generation coffee producers. Although coffee knowledge has been passed down through the family, the Carvajal Brothers have recently successfully modernized their practices by experimenting with natural processed coffees. This outstanding sun-dried coffee from the Carvajal Brothers packs intense fruit flavors and an abundance of sweetness. This single origin coffee is one of three Colombian coffees in our Annual Tres Fincas blend.

Finca El Corozal is owned by seven brothers who are 4th generation coffee producers.  Delfin Carvajal is the leader and is responsible for commercializing the coffee.  His brother Euclides lives at the farm and oversees picking, processing and drying.  Each member of the family oversees a different aspect of the business.

Although coffee knowledge has been passed down through the family, the Carvajal brothers knew if would be important to modernize their practices.  Last year, they decided to start experimenting with natural processed coffees (something still not very common in Colombia) as a way to receive a higher price tag for their coffees. They managed to get the process developed and this year they are expecting to produce over 250 sacks of exportable naturals. As a family, they see coffee production as a traditional Colombian way to make a proud living.  With their passion and discipline, they are able to earn a much higher price over the C-Market.  In addition, since 2009 they have the Rainforest Alliance Certification.

The farm sits at a range of elevations from 1500 to 1650 meters and the varieties that contribute to the naturals are Colombia, Caturra, and Castillo.

 

PRESENT
The recommended brew method for this coffee is V60.

Preheat everything, wet the filter and bring your water to 205 F. Dose 22 grams of coffee and zero the scale.  Coffee should be ground to a medium grind size.  First Pour: Pour two times the weight of the dose and let the coffee bloom for 1 minute.  Second Pour: Pour 50 grams every 10 seconds until 350 grams. Total brew time should be 3-4 minutes.
