Named after the highest volcano in Colombia, Nevado del Huila is comprised of lots from smallholder producers in Huila. This communal lot is carefully constructed, cupping every single small lot individually multiple times before being included into the group. Nevado Del Huila presenst a clean, sweet and approachable cup.  This single origin coffee is one of three Colombian coffees in our Annual Tres Fincas blend.

El Nevado Del Huila is a coffee comprised of producers in and around Northern and Southern Huila, notably the town of Santa Maria and Pitalito.  This communal lot is carefully constructed, cupping every single small lot individually multiple times before being included within the main lot.

In addition to cup quality, each coffee must meet strict physical requirements. The producer brings the sample to one of the buying stations for the first cupping.  Upon approval, the producer will then bring the lot to the warehouse where it will be cupped again, taking a sample from each sack to ensure consistency.  Upon final approval, the parchment coffee is packed in grain-pro and remains untouched until the entire lot is milled.

El Nevado Del Huila is an example of the hard work producers whose lots represent a clean, sweet and approachable cup.  The producers who contributed to this lot grow primarily Caturra, Colombia and Castillo, with farms sitting at a range of elevations between 1600 and 1900 meters.  El Nevado Del Huila is named after the highest volcano in Colombia, reaching nearly 5500 meters or 18,000 feet.

 

PRESENT
The recommended brew method for this coffee is V60.

Preheat everything, wet the filter and bring your water to 205 F. Dose 22 grams of coffee and zero the scale.  Coffee should be ground to a medium grind size.  First Pour: Pour two times the weight of the dose and let the coffee bloom for 1 minute.  Second Pour: Pour 50 grams every 10 seconds until 350 grams. Total brew time should be 3-4 minutes.
